🧆Chicken Dum Biryani ✨
✨Serves 4-6 people✨
Ingredients :
- 👉🏻Chicken (Biryani cut) - 1Kg
- 👉🏻Turmeric powder - half tsp
- 👉🏻Red Chilli powder - 2 tablespoons
- 👉🏻Cloves - 8-9
- 👉🏻Cardamom - 8-10
- 👉🏻Star Anise - 1
- 👉🏻Shahi jeera - 1 teaspoon
- 👉🏻Cinnamon - 1 inch
- 👉🏻Cardamom powder - 1 tbsp
- 👉🏻Green Chilli Ginger garlic blended paste : 1 and half tablespoon ( Green chillies - 5, Ginger - 1/4 cup, Garlic - 1/2 cup
- 👉🏻Saffron - pinch
- 👉🏻Fresh lemon juice - 1
- 👉🏻Fried Onions sliced of 4 medium sized onions
- 👉🏻Ghee - 2 tablespoons
- 👉🏻Coriander leaves without stems - 1/4 cup
- 👉🏻Curd - 400g
- 👉🏻Fried Onions oil - 150ml
- 👉🏻Hot water - 200ml
For rice:
- 👉🏻Water - 3L
- 👉🏻Basmati rice - 1Kg
- 👉🏻Cardamom - 5
- 👉🏻Cinnamon bark - 3 inches cut into small pieces
- 👉🏻Green Chillies slit - 6
- 👉🏻Mint leaves - 1 cup
- 👉🏻Chopped Coriander leaves - 1 cup
- 👉🏻Cloves - 10
- 👉🏻Salt - 4 tbsp (Adjust According to taste)
- 👉🏻Onions Fried oil - 100ml
- 👉🏻Lemon juice - 1
Cooking instructions:
- 👉🏻Arrange a thick base on bottom as first layer
- 👉🏻Seal the handi with dough or damp cloth
- 👉🏻Place handi on top of the thick base
- 👉🏻Put some weight on top of the handi
- 👉🏻Cook for 10 min on high flame and 25-30 min on low flame
- 👉🏻Switch off the flame and let it rest for 15 min
- 👉🏻Carefully mix everything
